Description: Come explore the kitchen with us! Students will learn basic cooking skills such as measuring, following a recipe, mixing, baking, and stovetop preparation. Through the course of the year, students will learn how to create yummy meals that they can make for their families. We’ll explore everything from breakfast and snacks to dinner and dessert. Many recipes can include ingredients such as milk, eggs, peanuts/other tree nuts, shellfish, soy, and wheat. Students with food allergies or strong dietary restrictions will be included to the best of the instructor's ability but may not always be able to eat what we make. All of our wonderful recipes will be compiled into our very own cookbook for students to have and keep at the end of the year.

French Toast with Mixed Berry Compote

Serves 3-5

Ingredients:

  • 1 cup frozen berries
  • 1 Tbsp. lemon juice
  • 1/8 cup sugar
  • 2 Tbsp butter

 

Instructions:

  • Measure and add all ingredients to saucepan
  • Turn heat to medium and bring mixture to a boil
  • Turn heat low and simmer for 10 minutes, stirring often

 

While the compote is simmering, make your French toast:

 

Ingredients:

  • 2 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla
  • Thick-sliced bread

 

Instructions:

  • Whisk together eggs, milk, and vanilla
  • Dip bread into mixture, coating both sides and fry in a buttered pan.
  • Serve with warm compote

This week we made 3 different pinwheel wrap sandwiches. Any tortilla will do, but we used whole wheat, tomato basil, spinach herb, and gluten-free (when needed).

 

Spinach Cream Cheese/Ham Pinwheels

Ingredients

  • 2 tortillas
  • ½ cup baby spinach leaves
  • 4 ounces cream cheese (half the package)
  • ½ tsp garlic powder
  • 4 slices deli ham

Instructions

  • Add spinach, cream cheese, and garlic powder to food processor and blend until smooth.
  • Spread over entire tortillas.
  • Lay 2 slices of ham on each tortilla, covering the bottom half.
  • Starting at the side with the ham, roll the wrap tightly.
  • Cut into 1 inch pieces and place on large plate to share with class.

 

Hummus/Carrot Pinwheels


Ingredients

  • 2 tortillas
  • About ¼ cup hummus
  • ¼ cup Shredded Carrots
  • ½ cucumber

Instructions

  • Spread hummus on each tortilla. 
  • Place about 1/8th cup shredded carrots on hummus in a line along one edge. 
  • Cut cucumber into small strips and place across the tortilla, above the carrots.
  • Starting at the side with the veggies, roll the wrap tightly.
  • Cut into 1 inch pieces and place on large plate to share with class.

 

Turkey, Cheese, and Mayo Pinwheels


Ingredients

  • 2 Tortillas
  • Mayonnaise
  • 4 slices deli turkey
  • 4 slices cheese

Strawberry Apple Salsa and Cinnamon Crisps

I was gone this week, and the fabulous Blair McCotter, our other cooking teacher, helped students make the following yummy treat:

Strawberry Apple Salsa with Crunchy Cinnamon Crisps


Ingredients:

  • ½ cup strawberries
  • 1 apple
  • 1 Tablespoon honey 
  • ½ orange
  • 2 tortillas
  • Spray oil
  • 1 Tablespoon sugar
  • 1 teaspoon cinnamon

Instructions:

Strawberry Apple Salsa Instructions

  • Wash berries and cut off the stems and quarter the berries. In a mixing bowl, mash the berries with a fork. 
  • Wash the apple. Go to cutting station (with teacher) where you will core and dice the apple.  Add to berries. 
  • Add the honey, stir.
  •  Juice half of an orange and add the juice to salsa bowl. 

Crunchy Cinnamon Crisps Instructions

  • Preheat the oven to 400.
  • Mix together sugar and cinnamon in a small mixing bowl.
  • Spray a little oil on the tortillas, then sprinkle with the cinnamon sugar mixture. 
  • Go to the cutting station where the teacher will help you cut each tortilla into wedges using a pizza cutter. Place them on a baking sheet. 
  • Bake 400 °F about 5 min, or until golden brown. 

Gooey Chocolate Cake with Whipped Cream and Berries

This week's delicious recipe was like a lava cake. Students had the option of adding whipped cream and strawberries. Next week I will be gone and Blair McCotter (Mon-Weds. cooking teacher) will be subbing for me.
 
Someone borrowed a white apron from our kitchen last week and accidentally brought it home. Would you kindly check you children's backpacks and return it if you find it? Thanks!
 

Swedish Gooey Chocolate Cake

Ingredients:

  • ½ cup butter
  • ½ cup cocoa powder (plus 1 tablespoon) unsweetened
  • 1 ¾ cups sugar
  • 1 cup plain flour (we used gluten-free)
  • 1 teaspoon vanilla extract
  • 3 eggs lightly whisked

Instructions:

  • Preheat oven to 350*
  • Cut the butter and put into 9” round pan. Put in oven to melt.
  • Measure and add dry ingredients (cocoa powder, sugar, flour)  to large mixing bowl.
  • Whisk eggs in separate mixing bowl
  • Add vanilla to eggs
  • Add melted butter to dry mixture and stir a little. Leave enough butter in the pan to coat the bottom and edges.
  • Add egg mixture to dry mixture and stir until well combined
  • Pour the mixture into the cake pan and bake for 25 minutes until the top is set but the center is still gooey
  • Let the cake cool for 5 minutes.
  • Serve warm with whipped cream and berries

Berry Yogurt Smoothie

Ingredients:

  • 1 banana
  • 1 cup frozen berries(we used blueberry, blackberry, and raspberry)
  • 1 ½ cups yogurt
  • 1 cup ice
  • ½ cup milk
  • 1 Tbsp. honey
Blend all ingredients in a blender until smooth.
 

 

Avocado Banana Smoothie

Ingredients:

  • 2  bananas
  • 1 cup frozen avocado
  • 1 1/2  cups oat milk (or coconut milk)
  • ½ cup ice
  • 2 Tbsp. honey
 
 
 
 

Cooking Class

Thank you to those who brought in their King Soopers gift cards! We will put them to good use! 
This week we got to know each other and became acquainted with our fabulous new kitchen. We'll begin cooking next week, so don't forget your aprons!
Some children have told me about food allergies that I was not aware of.  If your child has allergies, please let me know. I prefer to hear the details from parents instead of children, so I know how to best keep them safe.
